This treat is soft, creamy, cold, vegan, and free from refined sugars!!!!!! The best part is, it’s made with 3 simple ingredients and ready in minutes!!
The base of this deliciousness is from frozen bananas, which means you must plan ahead. At the end of each week, I peel, cut, and toss our old bananas into a bag and place them in the freezer. This way, weekly smoothies and emergency ice cream treats are only a few minutes away from hungry mouths. You could make this using bananas, not frozen, but it will be more like a smoothie bowl and less like an “ice cream treat.” So save and freeze your bananas, never toss them!!
Soft Vegan Berry Ice Cream
Ingredients
- 2 Bananas peeled, chopped, frozen
- 2 Cups Organic Mixed Berries frozen
- 1/4 Cup Coconut Milk
Instructions
- Place all ingredients in a food processor or high speed blender and pulse/blend. Scrape down the sides as needed and continue to blend on high until you reach a smooth consistency.
