
When I was pregnant with Darren, I craved Chinese food! I made this General Tso Chickpeas and Broccoli dish on repeat with a side of roasted chicken for Jonathan! Now as a family of four, we are making this frequently! Using basic household ingredients, this homemade General Tso Sauce comes together in a flash! This stir-fry dish is creamy, VEGAN, and loaded with fresh veggies like broccoli and red bell peppers. The best part is that this meal is ready in less than 30 minutes!!!

If you are serving this dish with rice, begin to prepare rice as instructed on package first. Next, prepare the General Tso sauce by whisking together all ingredients as listed. Heat oil in a large skillet over high heat. When the oil is hot, add the garlic, broccoli, and bell pepper strips, stirring continuously for a few minutes! Stir in the General Tso’s sauce and drained chickpeas – this is where the magic begins to happen, and all the flavors come together!!!! Cook for about 2 minutes, continuing to stir frequently, or until the mixture is hot throughout. Add more Aminos/Soy Sauce or chili sauce to taste!! I love working with Liquid Aminos in my food where I can because it tastes like soy sauce, but it’s better for you with 16 acids that help healthy functioning of body cells and organs! We use Bragg Liquid Aminos and you can pick up a bottle in most grocery retail chains.
This dish is served best warm with side of brown rice; garnish with green onions, and additional chili sauce as desired. I like it hot and loaded with chili sauce, but the kids get the toned down version. Seriously 30 minutes and dinner is on the table – this dish deserves a spot in the meal rotation!!
General Tso Chickpeas + Broccoli
Ingredients
General Tso Sauce
- 1/2 cup Vegetable Broth
- 3 tbsp Tomato Paste
- 1 tbsp Peanut Butter
- 2 tbsp Aminos or Soy Sauce
- 2 tbsp Rice Vinegar
- 2 tsp Sriracha or Chili Sauce add extra for desired heat level
- 2 tsp Sesame Oil
- 2 tsp Honey Mustand any mustard will work here
- 2 tsp Cornstarch
Chickpea + Broccoli Stir-Fry
- 1 15 oz Cooked Can Chickpeas drained
- 2 tbsp Coconut Oil or other favorite oil
- 1 Broccoli Crown cut into florets
- 1 Red Bell Pepper cut into thin strips
- 2 Cloves Garlic minced
- 4 Green Onions chopped for garnish
- 2 cups Cooked Brown Rice optional
Instructions
