Wet Ingredients for Fried Chicken: In a large glass bowl, combine the chicken with all the wet ingredients. Marinate in the fridge for 4-6 hours or overnight.
Dry Ingredients for Fried Chicken: Remove chicken from fridge and in a shallow bowl, combine all the dry ingredients except the oil. Using tongs, shake excess liquid off the chicken pieces and coat each piece in the dry flour mix.
Fry: Heat the canola oil in a cast-iron skillet or frying pan. Using tongs add each piece of chicken to the hot oil. Fry for 5-6 minutes on one side, then 2-3 minutes on the other side until golden brown and crispy. Drain on a paper towel lined plate and sprinkle with a little more salt to help the skin crisp up + add taste.
Blue Cheese Slaw: Toss all your ingredients together.
